What is a Frittata?

A Frittata is very similar to a quiche but always comes without crust. It is first cooked on the stove top and  then placed in the oven to bake to a golden brown.

The word Frittata is actually Italian and derived from the word fritta – fry. It used to describe any sort of egg cooked in a skillet. In the last 50 years it has become the definition for a sort of open face omelet.

So what’s so cool about Frittatas?

Frittata just sounds exotic and will have those guests, not knowing what to expect, drooling with anticipation.

The ingredients for Frittatas leave lots of room for creativity - you decide.

Frittatas can basically be a fat free dish if you choose that option

Frittatas store and reheat well and can be enjoyed any time of the day

Frittatas are great for using up leftovers

Frittatas can make for great low-budgets meals

So what do I need to make Frittatas?

    • A skillet that can go in the oven (cast iron works best) or use a regular frying pan and transfer ingredients into a baking dish before baking
    • Chopped, cooked vegetables… for the bottom layer
    • Cooked chicken, meat, seafood, ham, turkey, sausage (all optional) also for the bottom layer
    • Cheese, cooked pasta, rice, potatoes for a ‘middle layer’ (optional)
    • Whisked eggs to pour on top
    • Salt, (fresh) herbs and spices

Another version is to not make layers, but just mix all the ingredients and bake them in the oven to look similar to a quiche.

Typical ingredients are what you’d put into your omelet or quiche – onions, peppers, mushrooms, broccoli, spinach…

You can give your Frittatas an Italian touch, an Asian touch, a Mexican touch… through the combination of ingredients, herbs and spices you use.

You can also put a layer of cheese on top and/or place uncooked, thinly sliced vegetables for a pretty pattern.

Directions for a basic, easy Frittata (4-6 servings)

  • Saute 2 chopped onions, half a broccoli broken into small trees, a handful of sliced mushrooms in a cast iron skillet
  • Season generously with salt, pepper, thyme
  • Sprinkle some grated cheese on top of the vegetables
  • Pour 8 whisked eggs on top
  • Sprinkle with salt, pepper, nutmeg and chili flakes
  • Place some halved cherry tomatoes and raw little broccoli trees on top of the egg mixture for decoration
  • Bake for about 20 minutes at 180° C
