How to use flaxseed

I actually do have memories of eating flax seed in my yogurt in my teenage years back in Austria and could not remember why I’d eat such ‘unusual’ things at that age and actually know how to use flax seed – it turns out that they have been used in traditional Austrian medicine internally (directly soaked or as tea) so I guess it’s just an Austrian thing to do. I am yet to use it at Mary’s Dinner Club, but surely feel inspired to do so after finding out the below.

Flax, usually referring to the plant itself, is one of the oldest fiber crops in the world and dyed flax fibers dating back 30.000 years have been found in a cave in Georgia. Nowadays it is also grown for its use as edible oil and nutritional supplement and even as ornamental plant in gardens. In fact, its Latin name usitatissimum means most useful.

Flax seed is quickly turning into one of the new super foods as it is low in carbohydrates and contains high levels of dietary fiber, an abundance of micronutrients and omega-3 fatty acids. So – learninghow to use flax seed is good for you! It comes in brown and yellow (or golden) and only one yellow kind (Linola) contains less omega-3 fatty acids.

How to use flax seed

You should drink lots of fluid while eating flax seed. Whole flax seed will sail right through you so to get the benefits, it’s best to grind it into meal (or purchase it that way). Note though that because of it high oil content the powdered form will go rancid quickly.

It has a lovely nutty taste and when soaked in hot water will turn soft and gel-like, yet keeping a bit of crunch to it. There are many fun and tasty ways how to use flax seed.

Try it with yogurt, fruit, ricotta or cottage cheese, in smoothies and shakes, or mixed into soups, salads, casseroles, pancake or muffin batters. Use it whole or grind, use it for baking bread – in the dough or sprinkled on top. Here a really good brief presentation on this wonder seed and its many benefits and uses

How to use flax seed in Hash browns  (serving 2-3)

  • 1 cup chopped onions
  • 1 clove garlic, minced (otpional)
  • 1 tablespoon olive oil
  • 2 tablespoons ground flaxseed
  • salt, pepper to taste
  • chili flakes (optional)

Rinse the grated potatoes in a bowl of cold water. This will wash out a lot of the starch. Pour into a colander and drain.

In a medium skillet, start to brown the onions in the olive oil, add the potatoes and cook while stirring occasionally until crispy and browned.

Add the ground flax seed, salt, pepper. Stir well, remove from heat and serve while hot.
