Recipe for zucchini involtini

Just reading the name out loud makes me suspect that I chose this recipe for zucchini because of the cool sound of it.

How this recipe zucchini involtini rolled into my kitchen

I do remember that it was for an Italian dinner at Mary’s Dinner Club during which an Italian friend kept coming into the kitchen to pick up strips of my homemade pasta, asking ‘You will put that into water? Gosh you are brave!’ Obviously the pasta was just fine and everyone enjoyed the luxury of eating freshly made pasta – even the Italian guest.

The zucchini involtini were also a great success, less because of their name, but because of their pretty looks and yummy taste. So if you want to impress your friends and guests with something really fancy looking but simple, this recipe for zucchini involtini is for you.

They look especially appetizing if you grill the long thin zucchini slices in a griddle before stuffing them, so they have diagonal stripes. You’ll see it’s really easy and fun!

Recipe for zucchini involtini filling

Most commonly zucchini rolls are filled with cheese – you can use any kind/or combination you like:

Ricotta, goat cheese, feta, cream cheese, mozzarella, gouda, parmesan

Add one or several of the following ingredients

  • Fresh basil or parsley, rosemary or thyme or a dried herb mix
  • Spinach, roasted peppers, ham or smoked turkey
  • Dried tomatoes or olives

You can also add:

Drizzle with balsamic dressing, or an orange juice – honey dressing or raspberry vinegar dressing
