Easiest zucchini salad recipe ever

I think I may have come across this zucchini salad recipe when I was (once again) having way too much zucchini in my fridge. Here in Cyprus zucchini is really inexpensive most of the year and I generally end up buying too much because it’s ‘such a good deal’. Usually the small dark green ones are the most flavorful.

In that particular case I was preparing for a picnic at Mary’s Dinner Club and as always ended up altering a recipe I had found – the result was super. So if you need a big, filling and out of the ordinary salad for your next event, think zucchini salad recipe – it is fast to make and keeps well.

Ingredients for my very first zucchini salad recipe

(for 6-8 servings)

  • 4 zucchini, finely sliced (easiest with a cucumber slicer)
  • 10 slices of Emmental cheese, cut into squares
  • 1 stalk of leek, finely sliced
  • 1 bell pepper (red or orange), diced
  • salt, olive oil and balsamic cream

I have since created many more variations of this zucchini salad recipe and have found that zucchini goes really well with fruit, nuts and seeds

Ingredients for my latest zucchini salad recipe creation

  • 4 zucchini, finely sliced (easiest with a cucumber slicer)
  • 10 slices of Emmental cheese, cut into squares
  • 2 large pears
  • 2 heaped tablespoons sunflower seeds
  • salt, olive oil and balsamic cream

Other ideas for your very own zucchini salad recippe creation

  • Apples, preferably a sour kind, thinly sliced
  • Dried apricots or cranberries
  • Tangerines Canned or fresh
  • Mangoes, fresh or canned
  • Watermelon, diced
  • Fresh figs, sliced
  • Stronger cheese like Romano or Parmesan
  • Tomatoes and fresh basil
  • Red onion or celery
  • Pine nuts or a seed mix
