Quick zucchini soup

It takes 15 minutes to make, it uses 4 ingredients, it's healthy and it tastes amazing! My quick and easy zucchini soup.

The flavors of zucchini are so subtle, so comforting.  Discover how wonderfully they develop in this really easy 4-ingredient soup which leaves lots of room for its natural beauty - let it surprise you!

The ingredients for your 15-minute soup: 

  • 1 kilo of zucchini, washed, tips trimmed, cut into chunks
  • 2 onions, diced
  • 2 gloves of garlic, crushed
  • 1 liter water and 1 tablespoon (or cube) of instant vegetable broth
  • oil to saute onions, salt, pepper
  • garnish like fresh herbs, croutons, mushrooms, yogurt...  (optional)

Directions:

  • heat a tablespoon of oil in your pot
  • add onions and saute until translucent
  • add garlic and saute for another minute
  • add zucchini
  • add water and soup cube/powder
  • bring to a boil and let simmer for about 15 minutes
  • season to taste with salt, pepper, chili, cumin, nutmeg...
  • if you like a creamy texture, blend
  • serve hot and garnish with toppings of your choice

It keeps well, it freezes well, it tastes amazing...  don't be caught without a good stock of this quick and easy zucchini soup for a satisfying meal or in-between snack!
