Easy Pumpkin Bread

When you live in a country where pumpkin carving and cooking with pumpkins is not really popular your craving to actually ‘do something with a pumpkin’ is somehow doubled - making easy pumpkin bread for example.

So after a highly satisfying photo session I’ve opted to turn my little pumpkin into bread - the Austrian kind, heavy, dark and hearty. I am even the proud owner of real Austrian pumpkin seed oil but you may replace that with vegetable or olive oil - your bread will still be lovely!

Ingredients for easy pumpkin bread

  • 500 gr pumpkin, finely grated
  • 1 kg flour - whole wheat or whole wheat mixed with white flour
  • 2 packets dry yeast
  • 1 tablespoon salt
  • 60 gr pumpkin seeds
  • 3 tablespoons pumpkin seed oil to brush on top once baked
  • 450 ml water
  • 1 teaspoon each of ground fennel, cumin, coriander, mixed


  • Mix all dry ingredients
  • Add 450 ml water and pumpkin
  • Knead into a soft dough
  • Let rest for 30 minutes
  • Fill into 2 greased bread forms
  • Let rest for another 30 min
  • Bake at 200 C for 1 hour with a dish of water in the oven
  • Remove from bread form and brush with mixture of pumpkin seed oil and 4 table spoons hot water
