The queen of African food recipes - Poulet Yassa

Having lived in Burkina Faso, West Africa for many years, I will always continue to have a passion for African food recipes. Some are tricky to recreate in the Western world, but here two popular ones that everyone can make at home.

Poulet Yassa – a tangy dish made with chicken and lots of onions  and lemon juice and one of my very favorite African food recipes, is actually of Senegalese origin. I have many fond memories of an outdoor eatery in Ouagadougou, capital of Burkina Faso, where we enjoyed many Saturday lunches without ever indicating what we wanted. Saturday was just Poulet Yassa day. The dish is actually very easy to make and freezes well.

One of my  favorite African food recipes – Poulet Yassa

  • 1 chicken, cut into serving-sized pieces
  • 6 – 8 large onions, cut into small wedges or slices
  • ½ cup of lemon juice
  • ½ cup of vinegar (cider vinegar is good)
  • ½ cup of vegetable oil
  • 1 bay leaf
  • 4 cloves minced garlic
  • 2 tablespoons Dijon mustard (optional)
  • 1 chicken broth cube
  • 1 chili pepper, cleaned and finely chopped (optional)
  • black pepper, salt, a teaspoon of sugar
  • Mix all in a glass dish and let marinate for a few hours or over night
  • Remove chicken pieces and sauté for a few minutes till golden brown on each side
  • While chicken is browning sauté onions in a separate pan for a few minutes and add a bit of sugar
  • Pour marinade back over onions and cook into a sauce
  • Add chicken and simmer until done (depending on size of pieces 20-30 min)
  • Serve with rice
