Thinking outside your porridge - cooking oats

It seems that poor cooking oats have been stuck with their rather boring reputation as bland breakfast food. Yes, creamy sweet porridge is certainly a wonderful comfort food, but how about a bit of a kick? Well, it seems things are changing…

Cooking oats are being used for a bigger variety of dishes nowadays and health food stores also sell specially certified gluten-free oats. Pure oatmeal would actually be gluten-free, but most oatmeal brands on the market today are not pure – they contain oats that have been cross-contaminated with a tiny bit of wheat, barley and/or rye.

However, any kind of oat is high in fiber, low in saturated fat, and very low in Cholesterol and Sodium. It is also a good source of dietary fiber, Thiamin, Magnesium and Manganese.

Uses of cooking oats

Cooking oats have numerous uses but most commonly, they are rolled or crushed into oatmeal, or ground into fine oat flour. Oatmeal is often eaten as porridge and used in baking. Oats are consumed raw in muesli and granola. Oatmeal flour is often used for baking in combination with other kinds of flour. Cooking oats can be used as a binding agent and for thickening soups and stews.

Some other ideas for the use of cooking oats include

  • Make a savory oatmeal breakfast dish by mixing fried onions, mushrooms and cheese
  • Turn them into an Indian dish by mixing them into vegetable curries
  • Give them an Asian touch by thickening soups made with ginger, soy sauce, bok choy, fresh cilantro…
  • Make them feel Mediterranean by adding apple, gruyere and rosemary
  • Turn them into a side dish by adding herbs, chili, chutneys, spring onions, garlic…
  • Use them to thicken lentil spreads or yogurt dips
  • Bake them in a casserole with cheese and vegetables such as broccoli, chard, spinach…
  • Use them for paneer or roast them with herbs/spices to sprinkle on top of dishes
  • Make sweet or savory pancakes or crepes with oatmeal flour
  • Other foods that will go well with your salted oatmeal: avocado, spinach, kale, squash, caramelized onions
