Most amazing rocket salad recipe

Rocket is an unpredictable one - not only because of its name which varies depending on where you live (it is also known as roquette, rucola, rugula, colewort, or, in the United States, arugula) but becaus of its fantastically strong taste that can be brought out in so many surprising ways.

How my most amazing rocket salad recipe was born

My latest creation for Mary’s Dinner Club was the result of yet another ‘over-inspired’ trip to my neighborhood’s Bulgarian shop - I had a huge cube of feta cheese sitting in my fridge. Then there was the fact that I had been asked by the dietician who was to be the guest speaker at that particular dinner to cook with goji berries…

I had decided earlier on to serve rocket salad as the ‘leafy green vegetable representative’ and as I was washing the big pile of leaves - another over-inspirited purchase (here in Cyprus they are huge and very inexpensive) I remembered that feta cheese in the fridge and there was my recipe. An absolutely wonderful combination of flavors!

Ingredients for the most amazing rocket salad recipe (serves 6)

  • 2 bunches of rocket salad (about 400 grams)
  • 4 thick slices of feta cheese (about 2 cups diced)
  • 1 cup soaked goji berries (use the water for the dressing)
  • Olive oil, salt, balsamic cream


  • Rinse and chop rocket
  • Mix cubed feta with berries and vinaigrette and fold gently under the leaves
