Cold soup? Well yes!

Gazpacho has its origins in Spain/Portugal and while in Andalusia they have very strict guidelines on how 'real' Gazpacho is made, I like to keep things flexible - or fluid if you like.

The main ingredients are tomatoes plus cucumber, onion, garlic, some bread soaked in water, olive oil, and cold water. You put these in a blender and then have some fun adding chill peppers, spices and herbs. Add some ice cubes and top with some fresh basil or chives and enjoy the refreshing flavors and texture.
