Easy egg drop soup

Egg drop soup as such is just easy by nature - you just drop an lightly beaten egg or two into your broth and voila you have your easy egg drop soup! It is traditionally a Chinese soup and its name translates into  'egg flower soup'. Of course you can add a variety of ingredients such as tofu, bean sprouts, baby corn, carrots, some fresh ginger...

However, for this easy egg drop soup you just add frozen peas and some soaked wood ear mushrooms and you'll be amazed at the extremely satisfying flavors and texture. It makes for a quick and healthy snack and takes all of 5 minutes - so it's even good for those 'I need to eat something NOW moments'

Ingredients (for 1 serving):

  • 2 eggs
  • 1 cup of frozen peas
  • 4-6 dried wood ear mushrooms, soaked in hot water for about 15 minutes and chopped into strips
  • 3 cups of water with one tablespoon (or 1 cube) of instant broth
  • salt, (white) pepper, chili, soy sauce to taste


  • Boil the water with the instant soup
  • add peas and simmer for about 3 minutes
  • beat eggs lightly in a bowl and pour in slowly, gently stirring clockwise
  • add the mushrooms
  • season to taste with salt, pepper, soy sauce
  • garnish with fresh herbs, spring onions and or fresh chili and enjoy very hot
